A family favourite for a hearty casserole, slowly cooked until the meat is fall off the bone tender. The richness of the bones and meat is also perfect with the sweetness of dried fruit in James’ tagine recipe for Shanks with Apricots and Pistachios.

Description
Each shank is aproximately 450g and serves 1-2 people.
Halal: Our goat is not halal. All of the goats are stunned using non-recoverable bolt guns in accordance with EU law.
Delivery
We usually deliver on Wednesdays and Fridays. We will always do our best to accommodate you, so if you wish to receive your delivery on a specific day please write this in the notes section when you order or email [email protected].

Storage
Your meat will arrive frozen inside a recycled cardboard box with WoolCool insulation and ice packs.
You can pop it straight into the freezer or defrost and cook it within 5 days.

Cooking Instructions
The shanks cook wonderfully but don’t take my word for it.. Here is what St John said on a recent Instagram post (see second photo)
Kid Shank with Mash and Mint Sauce. Marinated for 24 hours in thyme, rosemary and salt. Braised with red wine, port AND madeira. The most buttery, golden mashed potatoes. Kid from supplier @cabritogoatmeat, who still delivers in person, in spite of being quite the star farmer these days, because he values these things and so do we. On the menu for lunch and dinner today at Bread and Wine. “Bloody great”, according to chef @megzcokes.
