Kid Shank with Mash and Mint Sauce. Marinated for 24 hours in thyme, rosemary and salt. Braised with red wine, port AND madeira. The most buttery, golden mashed potatoes. Kid from supplier @cabritogoatmeat, who still delivers in person, in spite of being quite the star farmer these days, because he values these things and so do we. On the menu for lunch and dinner today at Bread and Wine. “Bloody great”, according to chef @megzcokes. .
